What to Do?

I was walking through Sams Club the other day and I came across these very ripe bananas for $0.75. The girls each ate one in the car on the way home, but I had big plans for the rest!

I let them ripen for a few more days so they would be nice and mushy. So today, I put the girls to work and had them mash away. Then they scooped the mushy bananas into a measuring cup.

Then I taught the girls how to crack some eggs. They were perfect, and NO shells on their first try!
We mixed in the rest of the ingredients and then poured the batter into the pans. (I didn't get any pictures of this since the girls needed my help. Put the pan in the oven and set the timer. Now the waiting begins...


They were so excited when the loaves FINALLY came out!

Want to try the recipe? Here it is. Very easy and very delicious! I actually have one loaf pan that has 4 small loaves that I used. Instead of cooking it for an hour, I only cooked them for 30 minutes because I had 4 small loaves and they came out perfectly!

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed overripe bananas

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
