Whole 30-Day 14

Happy Valentine's Day!

OK.  One thing I am discovering as of today is that I am sleeping better.  Sleep is typically not my friend.  I have lots of sleep issues and have for most of my life.  Being valentine's day, Aaron let me sleep in some this morning.  While I slept super well last night, it has been one thing that I have been telling Aaron over the last few days.  That's a nice change thanks to the process!!!

I began my day 14 with 2 fried eggs and 3 slices of farmer's market bacon.  Delicious!  I absolutely adore bacon.  My house smelled like bacon for almost the entire day and it was glorious!

We spent the morning at church and enjoyed worshipping the One who first loved us!

When we came home, we had more leftovers for the kids.  Pizza and Mac 'n cheese.  Thankful these leftovers are gone! Now I don't have to see them every time I open the refrigerator!  I was definitely not sure what I was going to eat.  Having cook every meal is getting old.  I literally peeled and ate 3 clementines while I was trying to figure out what I was going to eat.  I sat down and started watching a little TV when all of a sudden, my valentine showed up with a plate of chicken and mashed potatoes.  They were left over from last week and they were absolutely perfect!

We had both Salmon (from Saturday) and Pork chops on the menu for this weekend and neither was something that we wanted to make.  The kids were asking for pancakes or waffles.

Since we had the delivery of our veggies on Thursday, I have to begin using them because they will go bad quickly.  I chopped up some sweet potatoes, red potatoes, asparagus, broccoli, carrots, onions, yellow peppers, and onions.  I am learning to be sure to have lots of these veggies on hand at all time.  I tossed them in olive oil, salt, pepper, and a little granulated garlic.  I baked at 425 degrees for about 20 minutes.  Cutting the veggies takes quite a lot of effort and time before waiting for baking.  So I cut a mango and enjoyed it as a snack while I waited for my veggies to cook.


I enjoyed the chicken that I had for lunch so much that I decided that I would eat some more of it.  We were all about finishing up leftovers today so I figured I would eat a little more with my baked veggies.  It was really good and very filling. I am trying to keep my plate half way filled with veggies at all of my meals.  Breakfast is a little difficult so I try to make up for it at dinner.  I typically have half a plate of veggies and then go back for seconds and sometimes thirds.  These baked veggies are super popular in our house so they don't last past dinnertime.  But since I did eat a different dinner tonight than the rest of the family, I have some left over.  I think I may throw them into some scrambled eggs in the morning for breakfast!


Compared to the sugar "demon" and food taunting of yesterday, today went on without a hitch.  I didn't feel like food was taunting me quite as much as yesterday.  I also didn't feel the urge to eat the chips, cookies, candies and everything that I have been wanting to eat.  Progress?  Just a fluke? I don't know yet.  I don't remember it being this hard when I did it in May/June.

Tomorrow marks my 2 week mark.  I am ready to hit the ground running with the next phase because the one that I am stuck in right now is not much fun!
